Did you know that a lot of foods can contain both protein and carbs - like quinoa, spinach, kale, and broccoli, while tofu contains mainly protein along with other vitamins like vitamin A, B-6, and calcium too! _ I'm not vegan or vegetarian but often like to incorporate vegan meals into my week. MEAL PREP MONDAYS // food for four days has been prepped and is ready to go for a new week. For breakfast I've got coconut yoghurt with oats and frozen blueberries. Lunches are pan fried salmon with brown rice, two boiled eggs and mixed veg. I may eat the boiled eggs as snacks depending on how hungry I am at lunch. Dinners are pumpkin and spinach salads with pork mince and pine nuts. Post workout I'll have a shake and also banana and PB.
